Mediterranean Spinach Salad topped with Salmon
This salad is a great light meal with plety of taste! There are lots of healthy nutrients in this easy to put together salad. A perfect side dish for main entrees.
1 packet spinach leaves
2 pieces of salmon
low carb Greek dressing
2/3 cup feta cheese
1/2 cup kalimata olives
1/2 cup pepperocini
1/2 small red onion, cut into rings
1/3 cup parmesan cheese
2 Tbs pesto
salt and pepper to taste
2 Tbs butter, cut into pieces or slivers
Remove skin from salmon and rinse. Sprinkle salt and pepper, smear with pesto, and add parmesan cheese. Place in shallow baking pan and add butter on and around salmon. Cover with aluminum foil and bake 20 minutes.
While salmon is cooking, combine spinach, dressing, feta, olives, and pepperocinis in a bowl and toss. Drizzle dressing over the top and add onions.
After the salmon has baked for 20 minutes, broil it for 2-3 additional minutes. Remove and set atop the salad.
