Lemon-Pepper Tilapia
A mild fish flavored with citrus-fresh lemon, spiced up with a little pepper and crisped stovetop style. Tilapia is one of the lowet-fat fish that you can eat. It has a flaky thin texture and is excellent for absorbing seasoning. Tastes great with a side of brown and white rice or with a tabouli salad.
4 Tilapia filets
freshly ground black pepper
1 large lemon or 4 Tbs lemon juice
2 Tbs butter or extra light olive oil
dill for garnish
Coat the tilapia filets with freshly ground pepper to taste. Instead of using lemon and pepper separately, you can also try a seasoning mix. McMormick's brand lemon pepper seasoning works particularly well. Warm a skillet on medium heat and add the butter until it starts to sizzle. Add the filets and cook approximately 2 minutes per side. Drizzle lemon juice over the filets as they cook. Remove from heat and serve hot.
