Chicken and Pecan Spinach Salad
This salad is a great light meal with plenty of taste! Lots of healthy nutrients in this easy to put together salad. A perfect side dish for main entrees, or eat alone for something light and healthy. Add balsamic venegar for a great low fat dressing.
2 chicken breast halves
2 tsp paprika
1 lemon
salt and pepper to taste
1 packet spinach leaves
1 cup pecans
1/2 cup crumbled goat cheese
Preheat oven to 400°. Rub chicken breasts with paprika, salt, and pepper. Bake on foil sheet for 25 minutes or until done. Allow to cool and sprinkle with juice from lemon. Cut into bit sized chunks. Toss together remaining ingredients and top with chicken pieces. Chill and serve.
