Ultra-Lite Bruschetta
An Italian favorite! You can make this zesty treat without loading up on the calories. Try serving your bruschetta on a fresh French brea. A great appetizer or afternoon snack!
8 slices light French bread, lightly toasted
2 large roma tomatoes
5 cloves freshly crushed garlic
1 tsp freshly chopped basil
10 Tbs extra virgin olive oil
salt and pepper to taste
Rub crushed garlic onto top of toasted bread. Mix together diced tomatoes and basil. Spread tomato mix over the slices of bread and sprinkle salt and pepper to taste. Drizzle with olive oil. Serve with a few mint leaves as garnish.
