Beef Stir Fry
This Asian dish can be eaten with veggies or brown rice for a great low carb meal! Easy to follow recipe. Add soy sauce and vinegar for extra flavor.
1 lb beef tenderloin, cut into thin strips
1/2 head chopped broccoli
1/4 cup light soy sauce
1/4 cup sesame seeds
1/2 bunch leeks, chopped into quarters
2 Tbs dried minced onion
salt and pepper to taste
2 eggs
1/3 cup vegetable oil
1 tsp minced garlic
1 tsp minced ginger
Beat eggs with fork and scramble. Set aside. Add oil to skillet on medium high and add garlic and vinegar. Wait about thirty seconds to flavor the oil, then add beef strips. Cook until done. Add remaining ingredients and reduce heat to medium. Stir constantly for ten minutes and add eggs.
